Carlos Rivera - CEO
The first Chiapas Restaurant was opened in London in 1980. It was the brainchild of Carlos Rivera, originally from Palenque, who came over to England in 1978 to study catering and English at the University of Westminster.
Carlos grew up in a traditional Mexican family in the Tequila industry, the youngest of 5 brothers and had always had a talent for tastes and cooking. After the success of the first restaurant in Chalk Farm, Carlos expanded and increased his London restaurants to 4 by 1996.
In the year 2001 Carlos will expand the Chiapas restaurant chain to 8 restaurants in London. The new restaurants will be in Covent Garden, Waterloo, Chiswick, and Greenwich.
